How i make banana muffins.

Hello world! How is the week going for you? My week has been full of events. I am grateful to God. I have been asked by some friends how i make my banana muffin so i am gonna share my recipe with y'all. Banana muffin is so delicious. The fluffiness is just so nice. Hmm...yummy in my tummy. It is very easy to make. It's good for breakfast and for just snacking. I personally eat it with any kind of smoothie for breakfast. The kids will love it too. It is simply the best...heehee. Below are the step by step pictures of the banana muffin and the recipe will be added.

1. Dry mix: Add 2 cups of flour, 1 teaspoon of baking powder, 1/2 cup of sugar( it depends on how sweet you want it to be), 1/2 teaspoon of salt (optional), add 1 teaspoon of cinnamon (optional), and dice up a banana (you can add your favorite nuts to the mix). Mix it altogether.

2. Liquid mix: add 1 cup of your choice of milk (2% low fat milk for me), 1 egg, 1/2 cup of vegetable oil (i prefer canola oil), and 1 teaspoon of vanilla extract.
Wisp it altogether. While doing this, turn on the oven and set it to 375F.
3. Add the liquid mix to the dry mix and beat it for 1 minute or 2 minutes. Do not beat it too much because it might be too hard after it is baked. When your batter falls easily when scooped, then the fluid is enough, if not, add a little bit of water.
(Not too thick)

4. Scoop the batter into the muffin  paper cup if you do not want it directly into the muffin pan. If not, oil the muffin pan and scoop the batter directly into the pan. One scoop will do. Put them in the oven.

5. While in the oven, your muffin should look like this. It looks good, right? hmmm...
6. Your muffin should be golden brown like this. Use a toothpick to check if your muffin is done. Your tooth pick should come out dry.

This is how i make my banana muffin. I hope this is helpful. Try it and see. Send me a picture of your muffins. Enjoy your muffins...yummy.
Next on the blog will be how to take care of your natural hair during summer and in the Nigerian weather. Stay tuned.
